Abstract

The orthogonal experiment design was performed to investigate the effects of the jet velocity, the jet angle, the jet slot width, the commutated plate area and the range hood flow rate on the performance of the range hood and the kitchen environment for the range hood with a jet air curtain and a commutated plate. The optimum design parameters of the air curtain were obtained. The results show that, coupled with the commutated plate, the air curtain with the optimum parameters can effectively control the movement of the high temperature air with oil fume in the kitchen. The range hood flow rate has a significant influence on the temperature distribution and the oil fumes concentration. For the range hood studied, the optimum value of the flow rate, the commutated plate area, the jet velocity, the jet angle, and the jet slot width are 10.5 m3/min, 0.22 m2, 1.5 m/s, -5°, and 4 mm, respectively.
